This recipe is for one quart of kombucha, brewed in a glass vessel with a wide mouth. Ingredient portions may be multiplied proportionately for up to six gallons.
First, brew a sweet tea with these ingredients:
- 1 quart of water (32 fluid ounces or 4 cups)
- 2 bags of tea (roughly 4 grams of loose tea)
- 2 tablespoons of starter (1 fl. oz)
- 1/4 cup white sugar
Then, allow it to cool to room temperature. Then, add:
- 1 kombucha culture (i.e., "mother" or "SCOBY")
- 2 tablespoons of starter (1 fl. oz)
Cover the jar with a paper towel and fasten it with an elastic band. Allow to sit from eight days to two weeks in a warm (75 to 85°F). Bottle when it reaches ideal flavor.
